These Blue Overnight Oats are creamy, dreamy and bittersweet. The butterfly pea flower tea powder infused with almond milk is magical and transforms oat bowls into something so enchanting, it makes breakfast super exciting – and the toppings of course!

Oats can get a little repetitive when eaten day in day out and I find that changing their colour and swapping up the toppings a bit really keep things spiced up. I also used the butterfly pea flower powder and almond milk mixture to make a chia pudding and it worked a treat, especially on top of the oats bowl.

How to make overnight oats?
To make overnight oats, you will need either milk or water, oats, sweetner and toppings. Add the milk to the oats with some sweetener (optional) and leave overnight in the fridge. Sprinkle with toppings the following day and eat immediately, hot or cold.
Can I replace milk with water for overnight oats?
Overnight oats can be made with both milk or water so either is absolutely fine. However, the milk generally tends to yield a more creamier bowl of oats.
What is butterfly pea powder?
Butterfly pea flower is a plant with purple flowers that is commonly consumed as a tea in many parts of South East Asia. The distinctive colour of the petals makes it a sought-after ingredients to add to food and drink and it has now been transformed into a powder version, hence the butterfly pea flower tea powder.
Can I heat overnight oats?
Overnight oats can be heated in either on the stove or in a microwave. The heat however will result in a oats that are more smushy and stodgy compared to the chilled oats bowl.
How to make chia seed pudding?
To make chia seed pudding, you will need chia seeds and milk, combine then two and whisk with a fork after 5 minutes. Allow to get thicker (at least 15 minutes) before eating.

Blue Overnight Oats
Ingredients
- 50 g oats
- 150 ml plant milk
- ½-1 tsp butterfly pea powder
- 1 tbsp maple syrup syrup
Toppings:
- Almonds
- Bananas
- Blueberries
- Strawberries
- Chia pudding chia seeds plus milk
Instructions
- Mix the milk, oats, butterfly pea powder and syrup in a bowl and leave overnight in the fridge.
- Remove from the fridge the next day, add sprinkles and drizzles and serve.
Where in the world do you find butterfly pea powder! Such a color!
