
This bowl of Peanut Butter Porridge is topped with caramelised banana, chocolate sauce and peanuts. It is creamy, indulgent, chocolatey, nutty, smooth and pure deliciousness. It’s basically pudding in the morning which is something I can’t resist!

Let’s face it, we all know oats can get a little boring if not spiced up right! It’s not always easy being creative with them, but with just a little imagination and a hunt in the kitchen, your breakfast can be transformed into something you really look forward to eating.

I don’t always have time to throw a banana into a hot pan (additional sugar and oil are optional but make it more tasty!) to caramelise it, but when it’s the weekend, the banana will be cooked!

How to make Peanut Butter Porridge? To make peanut butter porridge, you will need to combine oats with plant milk and peanut butter. Heat either in the microwave or a saucepan until oats are soft and milk is creamy and thick. Add sweetener of your choice along with the toppings or sprinkles you fancy and enjoy.
Can almond butter be used instead of peanut butter? Almond butter can be used to replace the peanut butter, or any nut butter for that matter. The taste will be slightly different as the distinct peanut flavour will be absent, but if you don’t mind that, then you won’t be missing anything by substituting the peanut butter with another nut butter.
What toppings can I add to porridge? You can add whatever you like to porridge. That way you’ll always find every bowl as delicious as the last. Whether sweet or savoury, both can taste great – though I have a greater preference for sweet!
Can I eat porridge cold? Porridge is best eaten hot, though it can also be eaten cold. Chilled porridge is quite gummy and sticky so my advice, if you prefer cold oats, would be to soak them in milk or water overnight (overnight oats), completely omitting the step that involves heating. This avoids the stodgy texture.

Ingredients for Peanut Butter Porridge:
- 50g oats
- 150ml plant milk
- ¼ tsp vanilla extract
- 1 banana cut lengthways
- ¼ tbsp coconut oil
- 1 tbsp peanut butter
- 2-3 squares dark chocolate
- 2 tbsp plant milk
Method:
- Mix the milk, oats and vanilla extract in a bowl and place in the fridge overnight.
- The next morning, in a frying pan, heat the coconut oil and add the banana. Cook on each side for 2 minutes until golden brown.
- Add the chocolate to the milk and heat until chocolate has melted.
- Add the banana, melted chocolate and peanut butter to the oats and serve.
