
These Gram Flour Pancakes are crisp, light, salty, spicy, fragrant and perfect for dipping. They are also vegan, gluten-free and grain-free. I have never attempted these myself – I was too used to my grandma making them so I never made the effort to learn how to make them until now.

Chickpea flour is a big staple in Indian cuisine especially for making breads and desserts. I’m a big fan of pancakes and even though I have a massive sweet tooth, I fancied a change in my pancake life! A grandmother’s cooking is always spot on so why not learn from the best right?! If I’m going to be making a savoury pancake, it’s got to be hers.

The chickpea pancakes are also known as pudla and they are typically served with chutney or pickle. I dipped mine in a spinach, mint and chilli chutney (you can never have too much spice!). I have a whole bunch of Indian food recipes inspired by my fam if you love this cuisine.

To make gram flour pancakes, you will need chickpea flour (besan or garbanzo flour), cumin, turmeric, green chilli, coriander and water. All ingredients are whisked together then ladled into a hot skillet to form a crepe. It is then cooked on both sides for a total of roughly ten minutes before being served, most commonly with chutney or pickle.

Gram flour is gluten-free. However it is important to note that it may have been processed in the same factory as other flours which may contain gluten, which could mean there is a risk of cross-contamination so keep an eye on the labelling if you are allergic to gluten (as I’m sure you do).
Is chickpea flour high in protein?
The average amount of protein in chickpea flour is roughly 22g per 100g. Chickpea flour is higher in protein content than other flours as it is made from a legume rather than a grain and also contains less calories.

Gram Flour Pancakes
Ingredients
- 180 g chickpea flour or gram flour/besan
- 750 ml water
- 1 tsp turmeric
- 2 tsp cumin seeds
- 1-2 green chillies chopped
- Handful fresh coriander chopped
- 1 tsp salt
- Oil to cook
Instructions
- Slowly whisk in the water and stir until there are no lumps.
- Add the chilli and coriander and allow to rest for 5-10 minutes.
- Heat a frying pan or skillet, add a dash of oil (optional) and pour a ladle full of batter, stirring the pan around to evenly distribute the mixture.
- Allow to cook for 5 minutes before flipping over and cooking a further 5 minutes.
- Serve immediately.
