
These Vegan Brownies are most definitely chewy, gooey, fudgy, creamy, chocolatey…everything a brownie should be. No refined sugar, no flour, grain-free, gluten-free and the perfect snack any time of the day, especially after a workout. Dare I even say healthy brownie?!

I was so impressed with this experiment, no flour or melted chocolate and it still resembled a brownie. I guess flour really isn’t a brownie essential, but that gooey texture, now that’s compulsory, otherwise you’re in danger of producing a cake and a brownie definitely ain’t no cake!

Why is this Good for Me?
- Walnuts are not only rich in protein but also the essential fatty acid, omega-3 in the form of ALA (alpha-linoleic acid). Research shows that not only can omega-3 protect the heart, but it also plays an important role in the health of brain tissues, hormone production and inhibiting inflammation (though more research is needed to establish the mechanism behind ALA as it must be converted first into another form of omega-3, DHA). Walnuts are also a good source of magnesium, a mineral that is required in a variety of processes such as nerve and muscle function, maintaining blood pressure and supporting bone health.
- Bananas contain vitamin C and vitamin B6 (pyridoxine). Vitamin B6 acts more like a coenzyme – this means it helps certain enzymes in our bodies to carry out tasks such as assisting in the metabolism of fats, carbohydrates and proteins and can also support our immune and nervous systems. Most famously, it is known for its high potassium content, a minerals that is vital for nerve function, muscle contractions, blood pressure and regulating fluid levels in our bodies. Other minerals bananas contain are magnesium, which is required for nerve and muscle function, maintaining blood pressure and supporting bone health, while manganese is needed to aid our metabolism and help with bone development. In addition, bananas also contain fibre.
- These brownies are also lower in saturated fat in comparison to their non-vegan counterparts and are suitable for those with intolerances to gluten since they are gluten-free.

Vegan brownies are made by mixing fat (nut butter), sugar (maple syrup and bananas), cocoa powder, bicarbonate of soda and nuts together before baking. The brownies are taken out of the oven while the batter is still a little runny and gooey.
Are vegan brownies healthy?
Vegan brownies are not necessarily healthy. Flourless brownies are not necessarily healthy. By healthy I refer to calorie, sugar and fat content, all of which do not have to be less in vegan flourless brownies. For anyone that has an intolerance or allergy to gluten, it is most definitely a healthier option, but only because flourless brownies avoid the onset of symptoms triggered by the presence of gluten.
How to make brownies fudgy?
The trick to fudgy brownies is to ensure not too much flour is added and the batter is not cooked for too long to avoid becoming more like a sponge cake. Furthermore , adding ingredients such as nut butter or melted chocolate promote a more gooey texture that is rich and creamy.
Vegan Brownie Substitutions
- Banana can be replaced with apple sauce or mashed dates
- Protein powder can be replaced with additional cocoa powder
- Any nut butter can be subbed for peanut butter
- Walnuts can be omitted or even replaced with other nuts

Vegan Brownies
Ingredients
- 1 banana mashed
- 120 g chocolate protein powder
- 1 tsp bicarbonate soda
- 200 g peanut butter
- 90 g cocoa powder
- 80 g walnuts chopped optional
- 65 ml maple syrup
- 150 ml soya milk
- 1 tbsp lemon juice
- 1 tbsp rapeseed oil
Instructions
- Preheat oven to 180C.
- Combine dry ingredients in a bowl.
- Fold in the wet ingredients.
- Mix together to achieve a smooth batter.
- Pour into a baking tin lined with greaseproof paper.
- Bake for 20 minutes.
- Allow to cool before cutting.
