
These Vegan Crepes are just a simple crepe recipe without the eggs and dairy – literally that is it. This one’s more of a minimalist post because I didn’t have the motivation to write any more but thought I need to share this recipe! Hope you guys are cool with that. This recipe comes with an orange and ginger caramel so it’s a little more spesh actually. There may be a lack of content in this post, but there is no lack of flavour, I can assure you of that!

Whether you’re reading this on pancake day or on any other day of the year, hope you enjoy your crepes – they work for breakfast, dessert and even a light lunch if you swap the sweet sauce for a savoury one, but why would you wanna replace the sweet with salty, let’s be honest! I have a great buckwheat crepes recipe with an awesome cheesy mushroom sauce if you have less of a sweet tooth.

Vegan Crepes Recipe
Vegan Crepes
Ingredients
Pancakes
- 150 g plain flour
- 450 ml plant milk
- 1 tsp vanilla extract
- 25 ml rapeseed oil plus extra to fry
Caramel
- 250 ml orange juice
- 50 g sugar
- Juice of 1 lemon
- 35 g fresh ginger cut into slices
Instructions
- For the pancakes, whisk all ingredients together until a smooth batter is achieved.
- Heat a small amount of oil until hot, ladle in a portion (1 full medium ladle) of the batter and swirl around the pan to spread evenly and thinly.
- Cook for roughly 1 minute when the edges start to slightly curl then flip immediately.
- Leave to cook on the other side for no more than a minute and leave aside.
- For the sauce, place all ingredients in a pan until sugar dissolves and the syrup is just about to reach boiling point.
- Remove the slices of ginger.
