Apple Blondie Recipe

3 healthy blondies stacked on one another drizzled with date caramel from vegan apple blondie recipe

I love a good Apple Blondie Recipe, especially when it’s vegan, gluten-free, flourless, healthy and made with just 4 ingredients. This one has a 3-ingredient date caramel to go with it too. I was super impressed at the fudgy texture and the sweet cinnamon coming through nicely to compliment the soft caramelised apples.

Trust me, if there’s an apple or blondie dessert you’re making, it has to be this one! So easy to rustle up and plenty of substitutions to make if you fancy making alterations here and there to suit your preferences or dietary requirements. I’ve adapted the tasty date caramel from my Vegan Millionaires Shortbread Recipe, which is to die for.

Perfect for Christmas and winter or autumn in general. I know so many people who don’t love apples (crazy right?!) – maybe they’re a bit of an effort to eat? That’s what I’m guessing anyway! But luckily, for those apples haters out there, you will definitely be liking them in here. Come test it out for yourself.

Why is it Good for Me?

  • Almond flour is a great alternative to regular flour, especially for those who are intolerant or allergic to gluten or grains. It is also a richer source of protein in comparison to other flours given that it is made with nuts and is a good source of lipid-soluble vitamin E. The fat content is higher than other flours, so bear that in mind.
  • You’ve heard the saying an apple a day keeps the doctor away right?! Well they definitely are a good source of many nutrients including soluble and insoluble fibre. Apples also contain a flavanoid called quercetin (also known as a phytochemical) which exhibits antioxidant and anti-inflammatory effects that can protect our bodies from damage due to free radicals – unstable molecules that can cause oxidative damage to our DNA and other tissues. The combination of all of these nutrients can support our health in many ways. And let’s not forget vitamin C, which apples also provide us with. Though bear in mind, most of these apples are stored in the skins so the more peel the better!
