These healthy, flourless Sweet Potato Brownies may sound like the strangest thing ever, but they are the best thing you’ve ever tasted. Super indulgent, gooey, rich, smooth, it’s crazy that something this delicious could even be eaten for breakfast.

These are a bit more lava cake-like compared to my Pumpkin Brownies, but just as scrummy.
Why is this good for me?
- Sweet potatoes are a vitamin C-rich food that have a low glycaemic index, which means they won’t cause as much of a blood sugar spike as their white potato counterparts. Also a great source of fibre and the minerals potassium and magnesium, which are needed for a nice and healthy nervous system. Their high vitamin A content, which also has antioxidant activity, is needed to maintain our eye health, cell development and immune function.
- Dark chocolate contains flavanols which exhibit anti-inflammatory and antioxidant activity. They have the ability to inhibit free radicals, which are unstable molecules or elements that can harm our bodies. However, be aware of the sugar content in chocolate, which can vary between brands.
