
Who’d have thought the day would come where Vegan Millionaires Shortbread would exist?! Today that happened and it changed my life. Okay well maybe not my life but definitely made many days a lot better!

You may have gathered by now that I’m a bit of a hypochondriac especially in regards to heart failure and diabetes, which runs in my family. Any time I can replace saturated fat or refined sugar in my food, I will, just for peace of mind that I’m doing my bit to prevent my family’s medical history from creeping up on me!

I hope you get a chance to make these because I’m pretty sure when you eat them you’ll be just as happy as me which is pretty mega right now!

How to make Vegan Millionaires Shortbread? To make Vegan Millionaires Shortbread you will need ingredients for the base, the centre and the topping. For the base, mix water, coconut oil and maple syrup together in a bowl then add oat flour. Mix to form a dough. Transfer to a baking tin lined with greaseproof paper and press down. Bake for 20 minutes then remove. For the caramel, add pitted dates, coconut oil and vanilla extract to a blender and blitz into a cream – add a dash of plant milk if necessary and scrape down the sides of the blender when needed. Spread on top of the biscuit base and leave aside. For the chocolate topping, heat plant milk until just before boiling point. Remove from the heat then add chocolate chips. Mix until chocolate has melted and pour on top of the caramel layer. You can also melt white chocolate and drizzle over the dark chocolate (while it is still liquid) and using a cocktail stick, make horizontal or vertical lines to create a marbled effect. Refrigerate for at least 1 hour. Cut into slices when cooled.
Are dates good for you? Dates are a nourishing fruit and are usually consumed in dried form. However, when dried, the sugar content becomes more concentrate, making it a more energy dense option. So although they are high in minerals and vitamins, they are not necessarily low in calories. If you’re like me and stick to your 5-a-day (England public health’s recommendations for fruit and veg portions!) then you might be pleased to hear that 2-3 dates count as a portion – bonus!
Is vegan chocolate healthy? Vegan chocolate is not considered a healthy food, but rather just an animal product-free option to regular chocolate which contains dairy produce.

Vegan Millionaires Shortbread Recipe
Serving size:
Makes 15 pieces
Ingredients for millionaires shortbread topping:
- 125g dark chocolate
- 2 tbsp plant milk
Ingredients for the shortbread filling:
- 200g pitted medjool dates
- 1 tbsp coconut oil
- 1 tsp vanilla extract
Ingredients for the oat biscuit base:
- 400g oat flour
- 250ml water
- 75ml coconut oil
- 5 tbsp maple syrup
Method:
- Preheat oven to 180C.
- For the base, combine wet ingredients then slowly mix into the oat flour to form a dough.
- Press dough down into a greased tin and bake for 20 minutes.
- For the filling, put everything into a blender and blitz until smooth and gooey- this may require some scraping along the sides of the blender.
- Spread over the biscuit base.
- For the topping, melt the chocolate and oil together then pour on top.
- Allow to set in the fridge for at least 1 hour.
