Apple Blondie Recipe
This fudgy apple blondie is vegan, gluten-free, flourless and super healthy. The 3-ingredient date caramel that comes with it perfectly compliments the squidgy apples tucked inside. The best dessert option for anyone and everyone!

Blondie
- 3 large apples diced
- 250 g almond flour
- 3 tbsp coconut sugar
- 3 tbsp cornstarch
- 1 tsp baking powder
- 4 tbsp water
- Pinch salt
- 1 ½ tsp cinnamon
Date Caramel
- 90 g pitted dates
- 1 tsp vanilla extract
- 250 ml plant milk
For the caramel, heat the milk to just before boiling point then add to a bowl along with the dates and vanilla extract.
Cover with a plate and allow to soak for 1 hour.
Add to a blender and blitz until smooth and no bits remain.
In a saucepan, cook the apples with a dash of water for around 10 minutes until tender and leave aside.
For the blondies, preheat oven to 180°C.
In a bowl, combine almond flour, coconut sugar, cornstarch, baking powder, cinnamon and salt.
Add the water and mix into a smooth dough.
Fold in the cooked apples.
Press into a 20cm square baking tin lined with greaseproof paper.
Bake for 20-25 minutes.
Allow to cool, drizzle the caramel over the top and serve.
- Almond flour can be subbed with coconut flour in a 50/50 mix. Oat flour can also be used, but should be in combination with another flour to retain a moist, chewy texture. If you are not gluten-free then other flours such as wheat can also be used instead.
- Apples can be omitted or replaced with nuts, chocolate chips or dried fruit.
