This Vegan Schnitzel is delicately crisp, golden, light and perfect with a squeeze of lemon. My first attempt at schnitzel. Well, with a German fiancé, it was just a matter of time before I had to learn how to make it myself – his mum would be so proud!

I actually didn’t think it was possible until I started experimenting to the extreme with all sorts of tofu recipes. Whether it be tofu cheese, tofu chicken or tofu fish, I had to attempt it. So why not schnitzel?!
