
Yes, those are Pulled Mushroom Burgers you see before your eyes! The filling may indeed look like pulled pork, but I kid you not, that is well and truly a king trumpet mushroom in disguise. Smothered in smoky BBQ glaze and shredded to delicious sticky, succulent threads of tastiness.

Super simple burgers that are easy to prepare and ready in less than an hour. They are also vegan and gluten-free.

These are mine and my fiance’s new favourite – especially when we’re feeling lazy. Trust me, proper comfort food that’s super easy to rustle up, you won’t disagree with that when you’ve had a go!

How do I make pulled mushroom burgers? To make pulled mushroom burgers, you will need king oyster (or king trumpet as they’re also known) mushrooms. Using a fork, start at the top of the mushroom and scrape. The mushroom strands will start pulling away. When finished, add to a baking tray and sprinkle with garlic powder, smoked paprika and salt. Bake for 20-25 minutes, allowing the water to be released from the mushrooms so they become more dry. Transfer to a frying pan with BBQ sauce and allow to simmer without a lid for another 10-15 minutes on medium heat. Spoon into buns with desired fillings.
Can I use any type of mushroom for pulled mushroom burgers? King trumpet mushrooms achieve a really stringy texture when shredded. Other mushrooms are not able to achieve this to such an extent. They are usually more delicate and tend to rip or break. One possible alternative would be Portobello mushrooms since these are also large, strong and meaty.
What is a King Trumpet mushroom? A king trumpet mushroom is also known as a king oyster mushroom and is a tough, large fungus. It has a meaty texture which makes it an ideal alternative for meat in many recipes.
Do I need an oven to make pulled mushroom? The pulled mushroom shreds can be placed straight into a frying pan but may not lose as much water content as in the oven, giving it less of a pulled pork texture.
Pulled Mushroom Burger Recipe
Serving size:
Serves 2-4
Ingredients for Pulled Mushroom Burger:
- 3 king trumpet mushrooms
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 60ml BBQ sauce
- Salt to taste
- Rapeseed oil to cook
Method:
- Preheat oven to 220℃.
- Using a fork, shred the raw mushrooms into stringy threads, including the caps.
- Add to a baking tray with a drizzle of oil, paprika, garlic powder and salt and bake for 20-25 minutes.
- Transfer to a pan with the BBQ sauce and allow to simmer for a further 10-15 minutes.
- Stuff into burger buns.
