
These Fried Mushrooms are crunchy, crisp, tender and perfect for dipping. The batter coating these tasty oyster mushrooms is completely gluten-free and flavoured with a unique spice blend that gives it the finger lickin’ factor. I like to call this KFM, get it?! Guess it doesn’t have a great ring to it really!

These don’t really taste like Kentucky fried chicken, but they are a good alternative if you want an easy vegan fried chicken recipe as there is not much prep needed, the cooking time requires just a few minutes and the taste is still delish.

Oyster mushrooms in this recipe make the texture mush more meat like than other varieties of mushroom.

How to make fried mushrooms? To make fried mushrooms, you will need oyster mushrooms, cornstarch, a blend of spices, milk and oil. The mushrooms are dipped in a cornstarch paste before being coated in the flour coating and being deep fried in hot oil. the result yields extremely crisp, golden mushrooms which slightly resemble fried chicken.
What is the best way to store mushrooms? Mushrooms are best stored in a paper bag in the fridge. If they are bought in a punnet wrapped in clingfilm, remove the plastic wrap and cover instead with a kitchen towel. They can last roughly around a week in these conditions.
Can oyster mushrooms be replaced by any other mushroom? Oyster mushrooms are quite chunky, meaty and well textured so they are ideal for frying, especially in this batter. However, all other chunky mushrooms can be used, though the textures and cooking times may vary.
Fried Mushrooms Recipe
Serving size:
Serves 4
Ingredients for fried mushrooms:
- 400g oyster mushrooms
- 200g cornstarch plus 2 tbsp for paste
- 1 tsp garlic powder
- 2 tsp onion powder
- 2 tbsp yeast flakes
- ½ tsp paprika
- ½ tsp cinnamon
- ½ tsp cloves
- ½ tsp cumin
- 100ml plant milk
- Oil to deep fry
- Salt and pepper to taste
Method:
- Wash and dry mushrooms and leave aside.
- Make a paste with the 2 tbsp cornstarch and milk.
- Prepare the crumb mix by combining the dry ingredients.
- Dip the mushrooms, one by one, in the cornstarch paste and then into the flour mix.
- Deep fry in hot oil until golden brown, around 2-3 minutes.
