
When it comes to the world of pizza, this Sweet Potato Pizza Crust kills it! How did I come up with this idea? Laziness is the bottom line. I couldn’t be arsed to go food shopping, evidently resulting in a lack of food in my fridge a well as in my cupboards, even the freezer was starting to get naked! I did have some potatoes and always have plenty of cornmeal (or maize flour or polenta – whatever you want to call it!). At first I thought, ooh gnocchi could work, but then I realised, I really fancied pizza.

Totally astonished at the results and the base really stayed in tact without falling apart – though I learnt that the dough can’t really be rolled with a rolling pin as it kept getting stuck so best to flatten with damp or slightly wet hands.

So when in doubt, just mash everything together (as you do!) to make some sort of flattened thing, stick it in the oven and it’s likely to be edible, especially when it’s drenched in some sort of sauce. You never know, maybe you’ll create something that will remain a staple in your diet or your fridge forever. I know this pizza base will be in mine.

Slowly add water and continue to mix until a dough forms. Break into 3 pieces and make into balls. Place one ball on a flat baking tray brushed with oil and press down until flattened to around 0.5-1cm thick.

Any sweet potato variety used in this pizza will work well. Using white potatoes may change the texture, though I can’t vouch for that as I’ve not tried it.

Makes 3 large pizza bases
Ingredients for sweet potato pizza crust:
- 200g Polenta
- 6 small or 3 large purple potatoes mashed
- Olive oil (plus extra for brushing)
- Water
Method:
- Mix together the potato, polenta and oil.
- Slowly add in the water and continue to mix until a dough results.
- Flatten it out (do not roll as the dough will break and stick to the rolling pin) straight on to a greased baking tray and bake for 25 minutes.
