
These ridiculously moist vegan Peanut Butter Blondies will never go out of fashion in my life. So fudgy and nutty and cakey – oomph! Not only are they gluten-free, but they’re also quick and easy to rustle up and can be made in advance if you have guests or just one of those future lazy days!

Never in my life had I heard of millet until about a year ago when venturing into the world of unknown grains. The flours that they are capable of transforming into miraculously baked goods is crazy (I’m not so sure if that sentence is correct, but meh, I’ll leave it in!).
As an expat in China, I’m pretty clueless when it comes to reading Chinese so even with the help of translation apps, my failures to transform mandarin into English are somewhat a frequent event. Luckily, with the help of Chinese friends, I can send them a photo of the label and they tell me what it is- it’s like Christmas, each text a surprise!

I was informed that the one of my bags’ of contents was in fact millet flour. Originating from the seeds of the flowering sorghum plant, the millet is ground into a fine powder and used traditionally in countries such as India for brewing alcohol as well as making bread, but I’m a cake fiend so that’s the direction I’m heading.

Why is this good for me?
- Millet is a gluten-free grain that contains both soluble and insoluble fiber. It is also a complex carbohydrate with a low GI (glycaemic index), meaning it can reduce blood sugar spikes since it takes longer for our bodies to digest. In addition, this calcium-rich cereal is a great source of potassium and magnesium.
- As well as being a great source of protein, peanut butter provides us with the minerals magnesium, phosphorous and zinc, and the vitamins B3 and B6. Zinc is essential in helping our bodies to make new proteins, including DNA. It also supports our immune systems. Vitamin B6 acts more like a coenzyme – this means it helps certain enzymes in our bodies to carry out tasks such as assisting in the metabolism of fats, carbohydrates and proteins and can also support our immune and nervous systems.
- Walnuts are not only rich in protein but also the essential fatty acid, omega-3 in the form of ALA (alpha-linoleic acid). Research shows that not only can omega-3 protect the heart, but it also plays an important role in the health of brain tissues, hormone production and inhibiting inflammation (though more research is needed to establish the mechanism behind ALA as it must be converted first into another form of omega-3, DHA). Walnuts are also a good source of magnesium, a mineral that is required in a variety of processes such as nerve and muscle function, maintaining blood pressure and supporting bone health.

How to make Peanut Butter Blondies
To make peanut butter blondies combine coconut oil, peanut butter, plant milk and vanilla extract and mix until smooth. To this batter, add brown sugar, chopped walnuts, millet flour and baking powder. Beat into a smooth batter. Fold in some chocolate chips and pour batter into a baking tin lined with greaseproof paper. Bake at 180 for 20 minutes before removing and allowing to cool in the tin. Slice before serving.
Is millet gluten-free?
Millet is a gluten-free grain that can be eaten by anyone who follows a gluten-free diet. Just be sure to check that it states on the packaging that the product is gluten-free as manufacturing processes can mean some foods may become contaminated with gluten during the processing stages despite being free of gluten in nature.
Can blondies be frozen?
These blondies can be frozen for up to 6 months when wrapped in clingfilm and stored in ziplock bags or airtight containers. To defrost, remove from the freezer and leave to thaw at room temperature for 2-3 hours.
Peanut Butter Blondie Substitutions
- Coconut oil can be replaced with rapeseed oil or olive oil. A flavourless oil would be better in order to retain flavour qualities.
- Peanut butter can be subbed for almond butter, hazelnut butter or cashew butter, though there will be less of a peanut taste in the final blondie.
- Coconut sugar or regular sugar can be used instead of brown sugar.
- Walnuts can be replaced with hazelnuts or macadamias.
- Chocolate chips are optional and can also be subbed for white chocolate chips if preferred.

Peanut Butter Blondies
Ingredients
- 75 ml coconut oil
- 150 g peanut butter
- 150 g brown sugar
- 150 ml plant milk
- 75 g chopped walnuts
- 1 tsp vanilla extract
- 100 g millet flour
- 1 teaspoon baking powder
- 100 g dairy-free chocolate chips
Instructions
- Preheat oven to 180C.
- Combine wet ingredients together and dry ingredients together before mixing both with each other.
- Pour the mixture into a baking tin and bake for 20 minutes.
- Allow to cool before serving.
