Peanut Butter Blondies

These moist and decadent, 1 bowl, nutty millet blondies are gluten-free and vegan. They make for the perfect snack, dessert and even breakfast or post-gym treat. Rustle up these nourishing delights in just a few minutes for a sweet bite that's eggless, dairy-free and soy-free.

Ingredients

  • 75 ml coconut oil
  • 150 g peanut butter
  • 150 g brown sugar
  • 150 ml plant milk
  • 75 g chopped walnuts
  • 1 tsp vanilla extract
  • 100 g millet flour
  • 1 teaspoon baking powder
  • 100 g dairy-free chocolate chips

Instructions

  • Preheat oven to 180C.
  • Combine wet ingredients together and dry ingredients together before mixing both with each other.
  • Pour the mixture into a baking tin and bake for 20 minutes.
  • Allow to cool before serving.

Notes

  • Coconut oil can be replaced with rapeseed oil or olive oil. A flavourless oil would be better in order to retain flavour qualities.
  • Peanut butter can be subbed for almond butter, hazelnut butter or cashew butter, though there will be less of a peanut taste in the final blondie.
  • Coconut sugar or regular sugar can be used instead of brown sugar.
  • Walnuts can be replaced with hazelnuts or macadamias.
  • Chocolate chips are optional and can also be subbed for white chocolate chips if preferred.
