I love a good Apple Blondie Recipe, especially when it’s vegan, gluten-free, flourless, healthy and made with just 4 ingredients. This one has a 3-ingredient date caramel to go with it too. I was super impressed at the fudgy texture and the sweet cinnamon coming through nicely to compliment the soft caramelised apples.

Trust me, if there’s an apple or blondie dessert you’re making, it has to be this one! So easy to rustle up and plenty of substitutions to make if you fancy making alterations here and there to suit your preferences or dietary requirements. I’ve adapted the tasty date caramel from my Vegan Millionaires Shortbread Recipe, which is to die for.

Perfect for Christmas and winter or autumn in general. I know so many people who don’t love apples (crazy right?!) – maybe they’re a bit of an effort to eat? That’s what I’m guessing anyway! But luckily, for those apples haters out there, you will definitely be liking them in here. Come test it out for yourself.

How to make apple blondies?

To make apple blondies, To make apple blondies, For the blondies, preheat oven to 180°C. In a bowl, combine almond flour, coconut sugar, cornstarch, baking powder, cinnamon and salt. Add the water and mix into a smooth dough. Fold in the cooked apples. Press into a 20cm square baking tin lined with greaseproof paper. Bake for 20-25 minutes. Allow to cool, drizzle the caramel over the top and serve.

To make date caramel, soak dates in hot milk along with vanilla extract. Place in a blender and blitz until smooth and no bits are remaining.

How to store apple blondies?

Ideally this is best eaten on the day, but should you have any leftovers, you can store the skillet cookie in an airtight container at room temperature for 2 days or in the fridge for up to 5 days, though the texture may change slightly if not reheating in the oven, which you can do for a couple of minutes just before serving again.

Can I freeze apple blondies?

The skillet cookie can be frozen but must be removed from the skillet beforehand. When cooked, allow to cool and remove the cookie carefully and transfer to an air-tight container. Can be cut into slices before being taken out from the skillet though if the skillet is small it may not be necessary. Can be frozen for 2-3 months.

Apple Blondie Recipe

This fudgy apple blondie is vegan, gluten-free, flourless and super healthy. The 3-ingredient date caramel that comes with it perfectly compliments the squidgy apples tucked inside. The best dessert option for anyone and everyone!

Ingredients

Blondie

  • 3 large apples diced
  • 250 g almond flour
  • 3 tbsp coconut sugar
  • 3 tbsp cornstarch
  • 1 tsp baking powder
  • 4 tbsp water
  • Pinch salt
  • 1 ½ tsp cinnamon

Date Caramel

  • 90 g pitted dates
  • 1 tsp vanilla extract
  • 250 ml plant milk

Instructions

  • For the caramel, heat the milk to just before boiling point then add to a bowl along with the dates and vanilla extract.
  • Cover with a plate and allow to soak for 1 hour.
  • Add to a blender and blitz until smooth and no bits remain.
  • In a saucepan, cook the apples with a dash of water for around 10 minutes until tender and leave aside.
  • For the blondies, preheat oven to 180°C.
  • In a bowl, combine almond flour, coconut sugar, cornstarch, baking powder, cinnamon and salt.
  • Add the water and mix into a smooth dough.
  • Fold in the cooked apples.
  • Press into a 20cm square baking tin lined with greaseproof paper.
  • Bake for 20-25 minutes.
  • Allow to cool, drizzle the caramel over the top and serve.

Notes

  • Almond flour can be subbed with coconut flour in a 50/50 mix. Oat flour can also be used, but should be in combination with another flour to retain a moist, chewy texture. If you are not gluten-free then other flours such as wheat can also be used instead.
  • Apples can be omitted or replaced with nuts, chocolate chips or dried fruit.
