
If you’re having a lazy day then these Peanut Butter Dates are the perfect snack. They require negligible effort, you can make a heap and leave them within arm’s reach to eat at your convenience!

No recipe needed really because the ingredients and the whole ‘process’ of compiling them don’t go beyond what you can see in the picture so this is more of a ‘how I eat mine’ kind of thing.

I’ve stuffed this bunch with sweet almond butter, drizzled with white choc and showered with crushed cocoa beans (which I mistakenly assumed were cocoa nibs).

How to make Peanut Butter Dates? To make Peanut Butter Dates, slit dates down the centre lengthways. Spoon 1 tsp peanut butter and stuff evenly inside. Sprinkle with chocolate shavings, cocoa nibs and white chocolate these ingredients are optional)
Is nut butter good for you? Nut butter is high in protein and can be nourishing since nuts can be a good source of polyunsaturated fats and minerals such as calcium, iron, magnesium and selenium. Due to the high fat content they are also energy-dense.
Are dates high in sugar? Dates that are dried have had the sugar concentrated within them as the water was removed. Since they are smaller when dried it is much easier to eat a larger amount. The sugar present within the fruit is natural and not added.
Peanut Butter Dates Substitutions
Peanut butter can be substituted for any nut butter in this recipe. Almond butter is a great alternative, though pistachio and cashew butter really work wonders with the flavour.
Any type of sprinkle, drizzle or flavour combination can be used. I like almond butter and hazelnut butter and for toppings, granola, chocolate chips or crushed nuts. Dates stuffed with whole nuts also taste great.
The best type of dates to use are medjool or any other dates that are similar and are quite soft and fudgy.

Serving size:
Makes 12 dates
Ingredients for peanut butter dates:
- 12 medjool dates
- 3 tbsp nut butter
- Melted chocolate (optional)
- Any sprinkles you fancy e.g. choc chips, crushed cookie (optional)
Method:
- Make an incision along the date, going all the way across one end to the other.
- Stuff dates with the butter, drizzle with melted chocolate and shower with sprinkles.
