
This Vegan Birthday Cake Recipe is literally in my top 10 cake list! Filled with layers of custard and jam and topped with a rich vanilla cream frosting. When I went to the US, I noticed that the term birthday cake appeared to be given to every cake that had hundreds and thousands on it, which was pretty confusing as they weren’t actual birthday cakes. There was birthday cake ice cream, birthday cake cheesecake, birthday cake latte- like none of these were really intended for anyone’s birthday, though I guess the colourful toppings resembled a kid’s birthday cake.

Yesterday, it was actually my boyfriend’s birthday so this cake really was made for a birthday. It’s just a basic old school sponge, but you can never go wrong with those solid grandma cake recipes. Mine is of course vegan, but I must admit, due to lack of baking powder it turned out rather dense and I couldn’t bear to serve it, but I didn’t want to throw it away either! So this week I’ll be making use of it in other recipes- they may be great, they may be terrible, only time will tell!

Anyway, if you do have baking powder it should turn out fine, so here’s the recipe!

Vegan Birthday Cake Recipe
Serving size:
Serves 12
Ingredients for vegan sponge cake:
- 400g plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 250g caster sugar
- 100 ml rapeseed oil
- 450 ml plant milk
- 75g strawberry jam
- 1 tsp vanilla extract
Ingredients for vegan buttercream frosting:
- 200g vegan spread
- 165g icing sugar
- 3 tbsp hundreds and thousands
Method:
- Preheat oven to 180C.
- For the sponge, combine all dry ingredients together before whisking in the wet ingredients.
- Whisk until creamy and there are no lumps.
- Pour mixture evenly into 2 cake tins lined with greaseproof paper.
- Bake for 25-30 minutes or until a knife comes out clean.
- For the topping, fold the icing sugar into the spread then beat until creamy.
- When the cakes are cooled, spread the jam over the top of one cake followed by a third of the buttercream.
- Place the other cake on top of the one with the cream and jam.
- Spread the remaining buttercream on the top before sprinkling with hundreds and thousands.
