
This Vegan Carrot Cake is scrumptiously moist, rich, spiced, sweet and studded with plump, juicy raisins. Just 10 ingredients, no sugar and no flour, you’re pretty much sorted with the ingredient checklist.
This cake was actually a happy accident- I accidentally forgot to add sugar and it tasted insanely good! I had my boyfriend’s family over for dinner and they’re not really big fans of vegan food or healthy eating in general so of course for me it’s always rather nerve-racking since 99% of my diet is reliant on the above two categories!

As a lover and doer of dinner party hosting, it’s the norm for me to cook up a dessert for anyone that comes over for a meal and on this day it just happened to be my experimental carrot cake to which I actually forgot to add sugar.
To my astonishment, they lapped it up and each morsel was polished off that evening. Some even said they preferred it without the iced topping, so I guess the frosting wasn’t even necessary. Phew!
This cake is so moist and flavoursome as it is, but if you fancy a frosted topping then go for it. I used the frosting recipe from my cinnamon bun breakfast cake and topped the entire thing with crushed pistachios which worked well.

How to make vegan carrot cake? To make overnight oats, there are just two basic ingredients required: oats and milk. When the oats and milk are combined and left in the fridge overnight, they create a wonderfully creamy, in-tact porridge, without the gooey texture of heated oatmeal. The addition of flavours such as matcha, vanilla, cinnamon etc can be added along with the milk to diversify the taste.
Is vegan carrot cake healthy? Compared to many cakes, this carrot cake is relatively healthy as it contains no refined grains, no added sugar, is low in fat and has a higher fibre content due to the addition of oats. However, vegan or not, many carrot cakes can be quite energy-dense and high in fat and sugar.
Is carrot cake gluten-free? Carrot cake is typically not gluten-free if using a traditional what flour recipe. However, substituting the wheat flour with ingredients such as oats or almond flour can make it a gluten-free cake.
Vegan Carrot Cake Recipe

Ingredients for vegan carrot cake:
- 1 large apple grated
- 2 medium carrots grated
- 50g raisins
- 50g walnuts
- 50g oat flour
- 1 tsp baking powder
- 200ml soya milk + 1 tsp lemon juice/vinegar
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp allspice
Method:
- Preheat oven to 180C.
- Combine carrots, apple, raisins, walnuts and milk and mix well.
- Fold in the remaining ingredients to form a sticky, lumpy batter.
- Scoop into a cake tin lined with greaseproof paper and bake for 40 minutes.
- Remove and allow to cool before frosting.
