
I had you fooled with this Vegan Stuffing right?! I couldn’t believe how much it looked like real-meat sausage stuffing topped with rashers of smoky bacon either! It’s actually made of a super simple 6-ingredient sage and onion stuffing topped with sweet and smoky mushroom bacon. The perfect classic accompaniment to your Christmas dinner or lunch. This stuffing is so versatile – it can even be eaten straight from the fridge if you’re feeling peckish, straight onto a sandwich with some hot gravy, hello yumminess! If you’re making a wellington or pie, add some of this to your filling for texture and flavour diversity, I guarantee, it will not fail to please.

How to make Vegan Stuffing
To make Vegan Stuffing, sweat onions with a dash of oil and cook for 10 minutes. In a bowl, add breadcrumbs, flax eggs, oil, salt, fresh sage and dried sage along with the onions and mix well. Shape into a log and wrap tightly in clingfilm. Chill in the fridge for 1 hour. in the mean time, mix together maple syrup, salt and smoked paprika. Add sliced king trumpet mushrooms to the maple mix and mix thoroughly to evenly coat slices. Bake in the oven at 200°C for 15-20 minutes, flipping halfway. Remove stuffing from fridge, unwrap and add one layer of the mushroom slices on the top, pressing firmly to stick down. Wrap tightly in foil, sealing the edges too. Bake in the oven for 30 minutes at 200°C. Allow to rest for 10 minutes before slicing to serve.

Can I use gluten-free bread to make stuffing?
Gluten-free breadcrumbs work just as well as wheat bread in this stuffing recipe.
Eating cold stuffing
This stuffing can also be eaten cold – perfect on a sandwich with gravy!

Vegan Stuffing
Ingredients
- 400 g breadcrumbs
- 2 medium onions
- 4 tbsp oil
- 2 flax eggs 2 tbsp ground flaxseed + 3 tbsp water
- 2 king trumpet mushrooms sliced thinly
- 1 tbsp dried sage
- Handful fresh sage
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- 1 ½ tsp salt
Instructions
- Cook onions in 1 tbsp oil until soft and translucent for around 10 minutes. Add an extra 5 minutes if you like them to be a little golden.
- In a bowl, add the breadcrumbs, 2 tbsp oil, 2 flax eggs, sage and 1 tsp salt along with the cooked onions.
- Using clingfilm, shape into a log, wrap tightly then chill in the fridge for 1 hour.
- In the mean time, preheat oven to 200°C.
- In a bowl, combine ½ tsp salt with maple syrup, 1 tbsp and smoked paprika.
- Add the mushroom slices and mix thoroughly to coat evenly with the maple mix.
- Lay flat on a baking tray, ensuring they are not on top of each other and bake in the oven for 15-20 minutes, flipping halfway.
- Remove stuffing from fridge and unwrap.
- Lay one layer of slices on top of the log and tightly wrap the entire stuffing log with foil, ensuring edges are also sealed.
- Bake at 200C for 30 minutes.
- Remove the foil and bake another 5 minutes before removing from oven.
