
This vegan, gluten-free, 1-bowl Strawberry Banana Bread is the next best thing going on around here! It’s super moist, fluffy, nourishing, contains no refined sugar and can make for the ideal snack or even breakfast, especially if you thrown in a few nuts or almond flour for a protein boost. I’m not lying when I say it’s seriously the best banana bread I’ve eaten – even better than chocolate believe it or not!

I topped mine with a bit of icing sugar mixed with lemon juice and fresh strawberries to add a little tangy sweet kick and for some extra prettiness, but obviously not necessary.

Why is this Good for Me?
- Bananas are a great source of the mineral, potassium, which is essential for regulating our heart and nerve activity. It also helps to balance electrolyte levels which is needed for balancing fluid in our bodies. Bananas are also a great alternative to sugar.
- Strawberries are a good source of polyphenols, which are antioxidants. Antioxidants exhibit the ability to fight free-radicals, which are unstable molecules or elements that can damage your body.
- Coconut sugar is a natural, less processed form of sweetener. Though it contains the same amount of carbohydrates and calories, it contains trace amount of inulin, which gives it a lower glycaemic index (GI) when compared to regular sugar.
- Rapeseed oil is a great oil for hot and cold cooking as it as a high smoke point, which means it remains stable at higher temperatures.

How to make Strawberry Banana Bread

To make Strawberry Banana Bread, preheat oven to 180°C. In a large bowl, mash bananas.
Pour the rapeseed oil, milk and vanilla extract into the mashed bananas bowl and mix until smooth and well combined.

Add the dry ingredients to the mashed banana.

Mix and beat with a wooden spoon until a thick batter results.

Transfer to a loaf tin lined with parchment paper.

Bake for 45-55 minutes.

What to do with dry banana bread
If the banana bread dries out a little, it can be toasted like regular bread and enjoyed with spreads. If you have a little more time, soak it in a custard mix to make Easy Vegan French Toast or bread pudding. If you don’t fancy cooking, combine with some icing or frosting to make cake crumb cake pops. The possibilities are endless!

Can I make this banana bread sugar-free?
The majority of the sweetness in this banana bread comes from the bananas so the coconut sugar can be omitted. However, bananas still contain sugar so this will not be a sugar-free recipe but will be free of added sugar or refined sugar.

- Nuts can be added for additional texture and flavour as well as a protein boost
