
This Coconut Cookie Dough is made with just 6 ingredients and is totally gluten-free and vegan. I don’t often cook with coconut flour so when I do, I keep things simple! This is where this cookie dough comes in!

If you’re not an uber coconut fan like me, you can replace the coconut flour with almond flour – which will also bulk up the protein content. You could also add some flavourings such as vanilla or mint extract to spice it up a little. Turn into balls or simply leave as the big lump you’ve created and eat away to your heart’s content. Be warned, the fat level is pretty high.
Coconut Cookie Dough Recipe

Ingredients for Coconut Cookie Dough:
- 130g coconut flour
- 60 ml maple syrup
- 1 tsp vanilla extract
- 30g coconut palm sugar
- 3 tbsp coconut oil
- 50g chocolate chips
Method:
- Combine all ingredients together in a bowl except chocolate chips and mix until a smooth dough is achieved.
- Fold in the chocolate chips until evenly distributed.
