
These vegan, flourless chocolate chip Almond Flour Cookies contain just 4 ingredients and are ready to eat in minutes! This super simple recipe gives you cookies that are buttery, soft, chewy and crisp on the edges, with those melty chocolate drops in each bite.

These cookies turned out surprisingly exceptional. I totally did not expect the chewy, crumbly texture. I bet these would be amazing as ice cream cookie sandwiches!

The almond flour gives these cookies a higher protein content than with cookies made with regular what or other grain flours. The coconut sugar also makes them a low GI (glycaemic index) option, minimising those glucose spikes.

How to make Almond Flour Cookies? To make Almond Flour Cookies , you will need to add almond flour, coconut sugar, chocolate chips and plant milk. Combine the almond flour, coconut sugar and milk in a bowl until a dough forms. Fold in the chocolate chips and mix until evenly distributed. Make into 12 balls and place on a baking tray lined with greaseproof paper. Flatten each ball slightly and bake for 15 minutes until edges are golden brown.
Is almond flour gluten-free? Almond flour is made of blanched almonds (almonds that have had the skins removed) that have been ground into a fine powder. It contains no grains and is therefore gluten-free. However, be sure to check on the labelling that it was produced in a factory that doesn’t handle gluten-containing items.
Almond Flour cookie Substitutions
A great almond flour substitution is coconut flour which is low in carbohydrates, gluten-free and grain-free. It works well in baked goods in place of almond flour.
Chocolate chips can be omitted if a more plain cookie is preferred. Other parts of the recipe do not need to be changed.
Milk can be replaced with water in the cookie dough.
Brown sugar is an ideal alternative to coconut sugar, though it will have a higher glycaemic index (GI), which means it will initiate a quicker spike in insulin since it is not broken down slowly as with complex carbohydrates or coconut sugar.

Ingredients for almond flour cookies:
- 150g almond flour
- 60g coconut sugar
- 2-3 tbsp milk
- 65g chocolate chips
Method:
- Preheat oven to 180℃.
- In a bowl, add the almond flour and coconut sugar and mix evenly.
- Add the milk and mix until a dough forms.
- Fold in the chocolate chips.
- Using a tablespoon, drop onto a baking tray lined with greaseproof paper.
- Bake for 15 minutes.
- Allow to cool before serving.
