
This 1-step Almond Cheese doesn’t need to be soaked overnight as with other nut cheeses and requires just 4 ingredients to be made. It’s creamy, delicate and versatile and super easy for anyone and everyone to make. The only step required is mixing!

This cheese reminds me very much of a mix between feta and cream cheese. Almond flour is used to create this creamy, spreadable cheese which can be used on toast, jacket potato, pizza, sandwiches and even in frosting if you omit the yeast flakes and salt.

How to make Almond Cheese? To make almond cheese, you will need almond flour, lemon juice, yeast flakes, rapeseed oil, salt and water. Add all ingredients to a bowl and mix until well-incorporated. Transfer to a bowl and wrap in clingfilm. Allow to set in the fridge for at least 1-2 hours.
Is almond cheese healthy? Unlike regular cheese, this cheese is packed with protein, unsaturated fat and lipid-soluble vitamin E. It is still and energy-dense food, but is also nourishing at the same time.
Almond Cheese Substitutions
To make this cheese more neutral or to be able to use it in sweet dishes, the yeast flakes can be omitted from the recipe.

Vegan Cheese Recipe
Serving size:
Serves 6
Ingredients for vegan cheese:
- 180g almond flour
- 2 tbsp lemon juice
- 2 tbsp nutritional yeast
- 2 tbsp rapeseed oil
- 125ml water
Method:
- In a bowl, combine all ingredients until well incorporated and almost dough-like.
- Line a tin or bowl with greaseproof paper and press mixture in.
- Refrigerate for an hour until slightly stiffer and chilled.
