Ingredients

Pastry:

  • 125 g dates
  • 125 g almond flour
  • 2 tbsp flaxseed ground

Poppy Seed Jam

  • 145 ground poppy seeds
  • 2 tbsp rapeseed oil
  • 65 ml plant milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp tapioca starch

Instructions

  • In a blender, combine the dates, almond flour and flaxmeal.
  • Knead into a smooth dough, adding a tad water if necessary to hold it together, and roll into a large sheet. Leave aside on a sheet of clingfilm.
  • Combine milk, syrup and starch and heat until it thickens.
  • Fold in the ground poppy seeds and mix into a paste.
  • Rub the paste on to the dough and roll.
  • Rest in the fridge for at least at hour to become more firm and serve.

Notes

  • Almond flour can be replaced with coconut flour for the dough and shouldn’t make any difference to texture. The taste will have an added coconut flavour.
  • Coconut sugar or soft brown sugar can be used in place of the maple syrup. If you prefer to be sugar-free then replacing with stevia would also be fine.
