Pastry:
- 125 g dates
- 125 g almond flour
- 2 tbsp flaxseed ground
Poppy Seed Jam
- 145 ground poppy seeds
- 2 tbsp rapeseed oil
- 65 ml plant milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp tapioca starch
In a blender, combine the dates, almond flour and flaxmeal.
Knead into a smooth dough, adding a tad water if necessary to hold it together, and roll into a large sheet. Leave aside on a sheet of clingfilm.
Combine milk, syrup and starch and heat until it thickens.
Fold in the ground poppy seeds and mix into a paste.
Rub the paste on to the dough and roll.
Rest in the fridge for at least at hour to become more firm and serve.
- Almond flour can be replaced with coconut flour for the dough and shouldn’t make any difference to texture. The taste will have an added coconut flavour.
- Coconut sugar or soft brown sugar can be used in place of the maple syrup. If you prefer to be sugar-free then replacing with stevia would also be fine.
