Baked Pakoras

These crispy Baked Pakoras are made with chickpea flour and are completely vegan, gluten-free and healthy. Enjoy this delicious Indian snack with cooling mint raita or spicy ketchup.

Ingredients

  • 100 g chickpea flour
  • 1 clove crushed garlic
  • 1 large head cauliflower prepared into florets
  • 1 tsp turmeric
  • ½ tsp ground cumin
  • ½ tsp garam masala
  • 100 ml water
  • Salt to taste
  • Handful fresh chopped coriander

Instructions

  • Preheat oven to 200℃.
  • Combine the water and chickpea flour to make a runny batter.
  • Add the garlic, spices, salt and coriander and mix evenly.
  • Lightly coat the cauliflower in the batter and place on a baking tray lined with greaseproof paper.
  • Spray with a dash of rapeseed oil and bake for 30 minutes, flipping over halfway.

Notes

  • Any vegetable can be used in this recipe instead of or alongside cauliflower
  • Vegetables used in this recipe can also be chopped into chunks and spooned onto the tray before baking
  • If the batter is not crispy after the 30 minutes, spray with a little oil and cook a little longer, checking every 5 minutes
