Baked Pakoras
These crispy Baked Pakoras are made with chickpea flour and are completely vegan, gluten-free and healthy. Enjoy this delicious Indian snack with cooling mint raita or spicy ketchup.

- 100 g chickpea flour
- 1 clove crushed garlic
- 1 large head cauliflower prepared into florets
- 1 tsp turmeric
- ½ tsp ground cumin
- ½ tsp garam masala
- 100 ml water
- Salt to taste
- Handful fresh chopped coriander
Preheat oven to 200℃.
Combine the water and chickpea flour to make a runny batter.
Add the garlic, spices, salt and coriander and mix evenly.
Lightly coat the cauliflower in the batter and place on a baking tray lined with greaseproof paper.
Spray with a dash of rapeseed oil and bake for 30 minutes, flipping over halfway.
- Any vegetable can be used in this recipe instead of or alongside cauliflower
- Vegetables used in this recipe can also be chopped into chunks and spooned onto the tray before baking
- If the batter is not crispy after the 30 minutes, spray with a little oil and cook a little longer, checking every 5 minutes
