Sweetcorn Fritters with Sweet Chilli Tofu Dip

Advertisements

If you’re looking for a simple, nutritious snack that’s packed with flavour, these Sweetcorn Fritters with a Sweet Chilli Tofu Dip are sure to become a new favourite. They’re crispy on the outside, soft in the middle, and served with a creamy, protein-rich dip that adds the perfect balance of sweetness and spice. Whether you’re making them as a snack or to serve as an accompaniment to lunch or dinner, they’re a delicious way to enjoy more plant foods.

As a dietitian, I love recipes that combine taste with nutrition, and these fritters do exactly that. Sweetcorn provides naturally occurring fibre to support digestive health, while also delivering important nutrients such as vitamin C, folate and antioxidants including lutein and zeaxanthin, which contribute to eye health. Combined with other colourful vegetables and spices, this recipe is an easy way to increase the variety of plant foods on your plate.

One of my favourite things about this recipe is how it contributes towards your weekly plant diversity, sometimes referred to as plant points. Research suggests that eating a wide variety of plant foods each week helps to support a healthy and diverse gut microbiome. Every different plant ingredient provides unique fibres and phytochemicals that nourish the beneficial bacteria living in our gut.

The creamy sweet chilli tofu dip is what really elevates this recipe. Tofu is an excellent source of plant protein, helping to make the meal more satisfying while also providing calcium (when calcium-set), iron and isoflavones. Blending tofu with sweet chilli sauce creates a smooth, creamy dip that’s both nutritious and incredibly easy to make, offering a simple alternative to mayonnaise- or cream-based dips.

These fritters are also wonderfully family-friendly. Their naturally sweet flavour makes them popular with children, while adults love how versatile they are. Serve them with a fresh salad for lunch, alongside roasted vegetables for dinner, or pop them into lunchboxes once cooled. They’re also ideal for meal prep, as they reheat beautifully and can even be frozen for busy weeks.

If you’re trying to eat more plants, increase your fibre intake, or simply enjoy more balanced meals, this recipe is a fantastic place to start. Small changes, like including more vegetables, legumes and whole plant foods in everyday meals, can make a meaningful difference to your overall diet while still being simple, affordable and delicious.

The Nutrition Behind the Ingredients

Sweetcorn

Sweetcorn is naturally rich in fibre, providing fuel for your gut microbiome while also supplying vitamin C, folate and carotenoids such as lutein and zeaxanthin that support eye health. It also counts as one of your weekly plant points.

Soya Milk

Fortified unsweetened soya milk provides high-quality plant protein and, when fortified, contributes calcium, iodine and vitamin B12. It’s one of the closest plant-based alternatives to dairy milk from a nutritional perspective.

Tofu

Silken tofu makes the dip wonderfully creamy while adding plant protein to help keep you fuller for longer. Calcium-set tofu also provides calcium, making it a fantastic staple in a balanced plant-based diet.

Onions

Onions add fresh flavour while contributing prebiotic fibres that help nourish beneficial gut bacteria.

Coriander

Fresh herbs are an easy way to add another plant point while boosting flavour without relying on extra salt.
