Sweetcorn Fritters with Sweet Chilli Tofu Dip

Ingredients

  • 1 red onion diced
  • 500 g sweetcorn tinned or frozen
  • 4 cloves garlic crushed
  • 3 tbsp cornstarch
  • 150 g gram flour
  • 1 tbsp Thai curry paste check if gluten free if going for GF option
  • Rapeseed Oil for shallow frying/spraying
  • Ingredients for dip:
  • 1 block block silken tofu
  • 2 garlic cloves
  • Juice of 2 limes
  • 2 tbsp yeast flakes
  • 1 tbsp chilli flakes
  • 75 ml Maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • Salt to taste

Instructions

  • 1.Add all ingredients for the fritters to a large bowl and combine with 250ml water (you may prefer to add a little less or more).
  • Heat rapeseed oil in a pan for shallow frying.
  • 3.Once oil is hot, ladle in mixture to make small rounds and pan fry on each side for approximately 4-6 minutes. If baking, place in oven at 220C and spray with oil and cook for 25 minutes, turning halfway.
  • 4.For the dip, add all ingredients to a blender and blitz until smooth and creamy.
  • 5.Serve whilst hot with the cooling dip.
