It is based on the infamous After Eights we have in England, of which a box containing these individually wrapped chocolate mint squares is present in every household during the Christmas period. However, this homemade version is vegan.

How to make After Eights

To make these after-dinner mints, roll out fondant icing and cut into squares. Melt dark chocolate in the microwave or a double boiler. Add mint extract and stir until well combined. Dip the fondant icing squares into the chocolate and remove with a fork, allowing excess to drip away. Place on a baking tray lined with greaseproof paper and allow to set for 1 hour in the fridge.

Homemade Vegan After Eight Recipe

These smooth after dinner mints are made up of a crisp dark dark mint chocolate shell filled with a soft fondant centre. Just 3 ingredients and really easy to make. The perfect petit fours after Christmas dinner – or any time!

Ingredients

  • 250 g Fondant icing
  • 150 g Dark chocolate
  • 1 tsp mint oil

Instructions

  • Roll out fondant icing until around 3mm thick and cut into squares.
  • Melt chocolate and stir in the mint oil.
  • Drop the squares, one at a time, into the chocolate and fully coat before removing onto a tray lined with greaseproof paper.
  • Allow to cool either in the fridge or at room temperature until chocolate solidifies.

Notes

  • Mint oil can be replaced with another flavouring to mix things up a bit
  • The surface can be sprinkled with toppings of choice such as crushed nuts or coconut chips
