Vegan Protein Fudge

A great fudge recipe without the work of churning! This smooth, rich vanilla and cinnamon Vegan Protein fudge is dairy-free, gluten-free and a wonderfully healthy treat. A great snack any time of the day.

Ingredients

  • 300 g almond flour
  • 180 g peanut butter
  • 85 g coconut sugar
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 apples sliced into thin wedges optional

Instructions

  • Combine almond flour, peanut butter, vanilla extract, coconut sugar, cinnamon and maple syrup using wooden spoon or blender until doughy.
  • Press into a brownie tin lined with greaseproof paper and refrigerate for at least 1 hour.
  • In a saucepan, heat the apples with the cinnamon and a dash of water or lemon juice.
  • Simmer until tender (around 10 minutes) and allow to cool to room temperature.
  • Lay apple slices on top of the fudge and transfer back to the refrigerator for another hour before slicing and serving.
