Vegan Protein Fudge
A great fudge recipe without the work of churning! This smooth, rich vanilla and cinnamon Vegan Protein fudge is dairy-free, gluten-free and a wonderfully healthy treat. A great snack any time of the day.

- 300 g almond flour
- 180 g peanut butter
- 85 g coconut sugar
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 2 apples sliced into thin wedges optional
Combine almond flour, peanut butter, vanilla extract, coconut sugar, cinnamon and maple syrup using wooden spoon or blender until doughy.
Press into a brownie tin lined with greaseproof paper and refrigerate for at least 1 hour.
In a saucepan, heat the apples with the cinnamon and a dash of water or lemon juice.
Simmer until tender (around 10 minutes) and allow to cool to room temperature.
Lay apple slices on top of the fudge and transfer back to the refrigerator for another hour before slicing and serving.
