Ingredients

  • 2 packs ready-rolled vegan puff pastry
  • 1 tin brown lentils drained and rinsed
  • 2 tbsp tomato purée
  • 1 large onion finely diced
  • 1 large carrot grated
  • 3 tbsp olive oil for frying
  • 1 tsp curry powder or to taste
  • 1 tsp dried mixed herbs or to taste

Instructions

  • Preheat the oven according to the instructions on your puff pastry packaging. Line baking trays with baking paper.
  • Finely dice the onion and grate the carrot.
  • Heat the olive oil in a frying pan over a medium heat. Add the diced onion and cook for 3–5 minutes until softened.
  • Add the grated carrot and cook for another 3–5 minutes until softened.
  • Drain and rinse the brown lentils, then add them to the pan with the tomato purée, curry powder and dried mixed herbs. Stir well and cook for a few minutes until combined and any excess moisture has evaporated.
  • Lightly mash some of the lentils with a fork if you prefer a softer filling. Remove the pan from the heat and allow the mixture to cool.
  • Unroll both packs of vegan puff pastry. Cut out 32 ghost shapes using a cutter or a knife, making two shapes for each pastry.
  • Spoon a small amount of the cooled lentil filling onto 16 pastry shapes, leaving a border around the edges.
  • Place the remaining pastry shapes on top of the filled pieces. Press the edges together firmly to seal, taking care not to overfill the pastries.
  • Arrange the ghost pastries on the prepared baking trays, leaving space between them.
  • Bake according to the pastry packaging instructions, usually around 20–25 minutes, until puffed up and golden.
  • Allow the pastries to cool before serving, particularly to children, as the filling will be very hot.

Notes

- Adjust the curry powder to suit your family's taste preferences.
- Ensure the lentil filling is relatively dry and completely cool before assembling the pastries to help prevent soggy pastry.
- The number of pastries will depend on the size of your pastry packs and ghost cutter.
- Serve with vegetable sticks, salad or fruit for a family-friendly Halloween meal.
- Store leftovers in the refrigerator in a covered container and reheat thoroughly before serving.
