- 250 g rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 375 ml plant milk
- 1 tsp vanilla extract
- 200 g applesauce
- 225 g fresh strawberries sliced
- handful strawberries for topping
Preheat your oven to 180°C and lightly grease a baking dish.
In a large bowl, combine the rolled oats, baking powder, baking soda, and any optional seeds if using.
In a separate bowl, whisk together the milk, vanilla extract, and applesauce until smooth.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Fold through the diced strawberries, reserving a handful to scatter over the top.
Transfer the mixture to the prepared baking dish and smooth the surface. Top with the remaining strawberries and chopped nuts if using.
Bake for 30–35 minutes, or until the centre is set and the top is lightly golden.
Allow to cool for 5–10 minutes before serving.
Serve warm on its own or topped with extra fresh strawberries and a dollop of yoghurt if desired.
