Preheat your oven to 200°C fan.
Take the whole bulb of garlic and carefully slice off the top so that the tops of the cloves are exposed.
Place the garlic on a piece of foil or in a small ovenproof dish. Pour the olive oil over the exposed cloves, allowing it to run down into the bulb.
Wrap loosely in foil if using, then roast for around 35–45 minutes.
The garlic is ready when the cloves are soft, golden and easily squeezed from their skins.
Allow it to cool slightly before handling.
Drain the butter beans and rinse them under cold running water.
Set them aside while you make the sauce.
Once the roasted garlic is cool enough to handle, squeeze the soft cloves from their skins and mash them into a smooth paste using a fork.
Place a large frying pan over a medium heat and melt the vegan butter.
Once melted, add the flour and stir continuously for around one minute.
Gradually pour in the plant milk, stirring continuously as you go. Adding the milk gradually can help create a smoother sauce and reduce the chance of lumps forming.
Once all the milk has been incorporated, stir in the roasted garlic, Dijon mustard, wholegrain mustard and smoked paprika.
Season with black pepper and salt to taste.
Allow the sauce to cook gently for a few minutes until it begins to thicken.
Add the drained butter beans to the creamy sauce.
Stir gently so that the beans are evenly coated, then cook for another 3–5 minutes, until heated through.
If the sauce becomes thicker than you would like, simply add a splash more plant milk and stir.
Taste and adjust the seasoning. You may want to add more mustard, smoked paprika, black pepper or a pinch of salt depending on your preferences.
While the beans are heating through, toast your bread until crisp and golden.
Spoon the creamy roasted garlic butter beans generously over the hot toast.
Finish with extra black pepper, chilli flakes, fresh herbs or any of your favourite toppings.
