Ingredients

  • 300 g vegan dark chocolate
  • 100 g roasted unsalted edamame beans
  • 50 g dried cherries
  • 20 g freeze-dried raspberries

Instructions

  • Roughly chop the dried cherries and gently break the freeze-dried raspberries into smaller pieces.
  • Break the dark chocolate into small pieces and place in a microwave-safe bowl. Heat in short bursts, stirring between each burst, until completely melted and smooth. Alternatively, melt in a heatproof bowl over a pan of gently simmering water.
  • Stir the roasted unsalted edamame beans into the melted chocolate.
  • Fold in the chopped dried cherries and freeze-dried raspberries, stirring until all the ingredients are evenly coated in chocolate.
  • Spoon the mixture into silicone moulds or onto a baking-paper-lined tray. Distribute the ingredients evenly between the portions.
  • Place in the fridge for approximately 1 hour, or until the chocolate has hardened completely.
  • Remove the rocky roads from the moulds or cut the mixture into 10 pieces if using a tray.
  • Keep in an airtight container in the fridge or a cool place until ready to enjoy.

Notes

- Choose a vegan dark chocolate that melts smoothly. A higher cocoa percentage will give a more intense chocolate flavour.
- Use roasted, crunchy edamame beans rather than cooked edamame, as moisture can affect the texture and setting of the chocolate.
- Try freeze-dried strawberries instead of raspberries, or dried cranberries instead of cherries. - Store in an airtight container in the fridge. They can also be frozen in a suitable airtight container.
- Contains soy. Check all ingredient labels for additional allergens and cross-contamination information.
- Nutritional values will vary according to brands and quantities.
- Whole roasted edamame beans are a choking hazard for young children. These rocky roads are not suitable for babies and young children in their original form.
