This vegan gluten-free Lemon Polenta Cake in a mug is moist, tart, sweet and the perfect comfort food and ready in 1 step that literally takes 1 minute. All you need to do is pop the ingredients into a mug, microwave and that’s it, you’re ready to go! This recipe is just for one, so no need to feel bad about not sharing because this cake is meant for just one person!

Also, if you despise washing up, this is a good cake to avoid a full sink, that’s the main reason for my love of this recipe!

How to make Lemon Polenta Cake? To make Lemon Polenta Cake you will need to add 2 tbsp fine polenta, 2 tbsp almond flour, 1 tbsp sugar , ½ tsp baking powder, 100 ml plant milk (plus 1 tsp lemon juice) into a mug, mix thoroughly with a fork and place and heat in the microwave at full power for  1 minute. Combine lemon juice with icing sugar and pour over the top whilst still hot. Allow to cool slightly before tucking in.

Is polenta gluten-free? Polenta is gluten-free. It is a flour made from ground maize (corn). It is suited to many recipes, thought can be quite grainy. When combined with water, it becomes very creamy. When this wet mixture is cooled it becomes quite solid, stiff and stodgy.

Lemon Polenta Cake Substitutions

The polenta can be replaced by almond flour or coconut flour if a grain-free version is preferred.

Any sugar can be used such as coconut, caster, stevia (sugar-free option) or 1 tbsp maple syrup.

All types of plank milk are suitable for this recipe.

Method:

  1. Except for the icing sugar, stick everything into a greased mug and beat with a fork.
  2. Cook in the microwave for 1 minute then remove.
  3. Pour the icing sugar over the top and allow to cool slightly.
