These fudgy Coconut Energy Balls are loaded with nourishing ingredients and are completely gluten-free and vegan. They make for the perfect snack any time of day and can last for quite a while out of the fridge which means they don’t take up fridge space – which tends to be a common problem for me!

These are velvety, soft, rich and flavoursome. Not just that, but they’re also vegan, gluten-free, grain-free and contain no refined sugar. And no cooking required, result!

How to make Coconut Energy Balls? To make Coconut Energy Balls you will need desiccated coconut, maple syrup, flax egg, turmeric, cardamom, rapeseed oil and protein powder (optional but some coconut flour can be subbed for protein powder if preferred). Add coconut, spices and protein powder to a blender. Blitz on high speed, until the mixture become more wet and paste-like. Add the flax egg, oil and maple syrup and blend until ingredients are well mixed. Remove and shape into balls and refrigerate for at least 1-2 hours.

Is coconut healthy? Coconut contains a range of B vitamins, vitamin C, fibre and minerals such as selenium, magnesium and phosphorous. However, it is also energy dense, of which most calories comes from saturated fat.

Coconut Energy Balls Substitutions

If you prefer to have a more neutral or plain flavour, you can substitute the spices for vanilla extract. Alternatively, you can also omit flavourings altogether and just savour the delicate coconut taste which is used as the base ingredient.

Chia seeds can be used instead of the ground flaxseed and do not necessarily have to be made into a powder beforehand.

Coconut sugar or soft brown sugar can be used in place of the maple syrup but add an extra tablespoon of rapeseed oil to prevent the mixture from becoming dry. If you use this instead of maple syrup, add with the dry ingredients to the blender rather than at the end as you would with the maple syrup.

Recipe for Coconut Energy Balls

Serving size:

Makes 20 balls

Ingredients for energy balls:

Method:

  1. Combine dry ingredients and blitz in blender until crumbly paste forms.
  2. Add the wet ingredients and continue to blend until all ingredients well incorporated.
  3. Lay a tbsp at a time on a tray lined with greaseproof paper and refrigerate for at least 1-2 hours.
