This Chocolate Vegan Fudge Recipe is packed with protein and nourishing ingredients. Made with chickpeas and almond flour with dates to sweeten it, it is definitely a healthier option compared to the traditional stuff, which in contrast is much higher in saturated fat, requires much more work and contains animal products – boo!

This version is much more simple and easier to make than traditional fudge which generally requires at least 20 minutes of hard graft after which point you’re left with a sore arm and a kitchen full of washing up and sticky mess! This one just needs to be popped into a blender and set in the fridge and voila, it’s ready to eat.

This can also easily be made grain free by replacing the oats with extra almond flour or coconut flour and also lower in sugar by replacing the coconut sugar with stevia. However FYI, coconut sugar is shown to be a low GI (glyceamic index) food.

How to make Chocolate Vegan Fudge? To make Chocolate Vegan Fudge, you will to add chickpeas, almond flour, peanut butter, coconut sugar, dates, vanilla extract and protein powder (optional) to a blender. Blitz until fudgy and ingredients have all blended well together. Remove from blender and press down into a tin lined with greaseproof paper. In a double boiler (glass bowl over a saucepan of boiling water), melt the chocolate. Pour over the fudge and refrigerate for at least 2 hours. When set, cut into chunks and store in airtight container.

How to store fudge? This fudge can be kept for up to 5 days in the fridge in an airtight container. It can also be frozen for up to 2 months.

Chocolate Vegan Fudge Recipe Substitutions

The almond flour can be replaced for coconut flour or oat flour.

The coconut sugar can be replaced with mashed banana if you would like to add no sugar to the fudge. The chocolate topping will still contain sugar.

The chocolate topping can be omitted if you prefer to have a less energy-dense fudge. However, if you would still like it to be chocolate flavoured, you can add cocoa powder to the fudge. If you add cocoa powder, add 1-2 tbsp rapeseed or melted coconut oil to avoid a dry texture.

Ingredients for fudge:

Method:

  1. Place chickpeas in a food processor and blend until creamy.
  2. Add the rest of the ingredients (except the chocolate) to the food processor and blend with the chickpeas, scraping down the sides when required.
  3. Press into a tin lined with greaseproof paper and set in the fridge for an hour.
  4. Melt the chocolate and pour over the fudge then allow to cool in the fridge another hour.
  5. Cut into slices or chunks and serve.
